Cutting Board Care

 

Wooden cutting boards can last a lifetime if they are taken care of properly.  You should inspect your cutting board before each use, checking to see if it appears overly dry, has cracked or if it has warped. If you notice any of these problems please address them right away.

 

Washing:

Wooden cutting boards should be cleaned after each use.  Hand wash them with water only or a mild soap if needed.  An alternative to using soap and water is to scrub the board using half of a lemon and course salt, then rinse.  Never put your wooden cutting board into the dishwasher to clean it.  The heat and soap from the dishwasher will draw out the oils and can cause it to split and warp.

 

Drying:

Towel dry your board after washing and allow it to air dry completely before you store it or lay it flat on your countertop. Propping your board on it’s edge allows the board to dry evenly on all sides.  This helps keep the board from warping or cupping. 

 

Conditioning:

Most cutting boards are conditioned using mineral oil and bees wax.  This finish helps to keep the wood moisturized and looking great.  It is important to apply conditioner as often as you can.  If your board appears to be overly dry then it is time to apply conditioner.  Only use mineral oil or a cutting board conditioner and apply to a clean, dry board.  If needed, lightly sand your entire board with 220 grit sand paper and wipe the dust off with a towel.  Apply the conditioner over the entire board then wipe off the excess with a clean towel.

 

Warped or Cupped Boards:

If your board has warped or is cupped it is most likely due to uneven drying.  A board that is left to sit in water or some sort of liquid may warp or cup.  The wet side will absorb the moisture causing it to swell, while the dry side cups.  We recommend thoroughly wetting the entire board (note: do not submerge or soak the board for any amount of time).  Towel dry the board thoroughly and prop it so it can evenly dry on all sides.  Repeat this until the warp or cup pulls out.  Follow with conditioning your board.
